Easy to prepare and assemble, this DORITOS® Nacho Cheese casserole is a take on baked enchiladas. It’s loaded with zesty cheesy flavor and perfect for serving a crowd.

    Preheat oven to 375°F.

    In skillet set over medium-high heat, heat oil. Cook ground beef, salt and pepper for 2 to 3 minutes or until starting to brown. Add jalapeño, onion and garlic. Cook for 3 to 5 minutes or until starting to soften. Stir in enchilada sauce; bring to a boil. Cook for 1 minute or until enchilada sauce is heated through.

    Gently crush DORITOS® Nacho Cheese Flavored Tortilla Chips into smaller pieces. Spread half of the chips in bottom of greased 9-inch square baking dish. Top with half of the beef mixture and half the Mexican cheese blend. Repeat layers 1 more time.

    Cover tightly with foil and bake for 30 minutes. Remove foil and bake uncovered for 10 to 15 minutes or until golden brown and bubbling.

    Let stand for 5 minutes before serving. Garnish with Cotija cheese and cilantro. Serve with lime wedges.

Tips & Tricks

  • For a green chicken enchilada variation, substitute ground chicken for the ground beef, and green enchilada sauce for the red enchilada sauce.
  • Serve casserole with guacamole and sour cream, if desired.
