This Cinco de Mango Couscous recipe blends the sweetness of ripe mango with the zing of lime and cilantro, tossed with fluffy couscous for a refreshing and vibrant dish with a hint of Mexican flair.

How to make it

    Prepare couscous according to package directions adding 1 tbsp of the olive oil and omitting salt. Let stand 5 minutes and fluff with fork.

    Transfer to medium mixing bowl. Add mango, tomato, onion, cilantro and jalapeño.

    Whisk together lime juice, remaining 2 tbsp oil, salt and pepper. Pour over couscous; toss to blend.

    Chill and serve.
