A fresh combination of couscous with black beans, Feta, basil and mint. Wrap warm in a tortilla or chill for a salad.

How to make it

    Prepare couscous according to package directions. Transfer couscous to a large bowl; cool 10 minutes.

    In small bowl, combine olive oil, lemon juice and salt.

    Add beans, tomato, Feta cheese, onion, basil and mint to couscous. Gently stir in olive oil mixture.

Tips & Tricks

  • Wrap: Spoon 1 cup couscous mixture in center of tortilla. Add 1/2 cup lettuce; fold bottom and sides of tortilla up and around filling. Salad: Chill. Serve over shredded lettuce, if desired
