Season your steak with sea salt and let dry brine in fridge for 30 minutes

Chimichurri: Combine chopped parsley, chopped oregano, chopped shallots, chopped chives, diced red and green chilis, chili flakes, grated garlic, pinch of salt and black pepper, squeeze of lemon juice, olive oil and red wine vinegar

Mix and adjust seasoning to taste, then cover and set aside to infuse

Bring steak to room temperature, then set skillet to medium-high

Add 1 tbsp of neutral oil to pan and place down steak. Sear for 2 minutes on each side, then set aside to rest

Add 3 tbsp of unsalted butter to pan along with some rosemary, thyme and garlic – leave to bubble (around 2 minutes)

Remove herbs, then add back in steak and baste for 2 minutes. Then leave steak to rest until 125 degrees

To an oven safe bowl, add some Doritos® and grate over some parmesan cheese. Place into oven at 300 degrees to melt for 5 minutes

Cut steak into cubes and sprinkle over the Doritos, then spoon over your chimichurri
