Doritos® Loaded Korean BBQ Chicken Nachos

    Korean BBQ Chicken Thighs: Heat oil in a pot over medium-high heat. Pat chicken thighs dry, then sear skin side down until golden brown. Flip and sear the other side for 3-4 minutes. Remove and set aside. In the same pot, add the onion, garlic and ginger. Sauté for 2-3 minutes until fragrant. Stir in gochujang, soy sauce, honey, rice vinegar and sesame oil. Pour in chicken stock and stir to combine. Return chicken thighs to the pot, skin side up. Bring to a gentle simmer, cover and cook on low heat for 35-45 minutes, until chicken is tender and infused with the sauce. Remove lid and simmer uncovered for 5-10 minutes to reduce and thicken the sauce into a sticky glaze. Taste and adjust seasoning.

    On a platter, place Doritos® Sweet Chili on the bottom, followed by the Korean glazed chicken thigh pieces.

    Layer kimchi and the Korean mayonnaise over the chicken thighs.

    Garnish with toasted sesame seeds and spring onions

    Serve with an ice-cold Pepsi® Zero Sugar and enjoy!
