Doritos® Loaded Tangy Cheese & Vegetarian Chili Nachos

How to make it

    Vegetarian Chili: Heat the olive oil in a large pot. Add onions, peppers, carrots and celery. Cook until softened (~8 minutes). Add the garlic. Stir in tomato paste and spices. Cook for 1-2 minutes. Add beans, diced tomatoes, and broth. Stir well and bring to a boil. Reduce heat to low, simmer for 30-40 minutes until thick. Stir in lime juice and season with salt and pepper.

    In an oven safe bowl, add some Doritos® and grate over cheese blend. Place into oven at 300 degrees to melt for 5 minutes

    Spoon vegetarian chili over the Doritos, then add in the pico de gallo, cheese sauce, salsa and fresh lime wedge.

    Serve with an ice-cold Pepsi® Zero Sugar and enjoy!
