Combine juice, olive oil, cinnamon, coriander, salt and, if desired, cayenne pepper in 1-1/2-quart saucepan; mix well. Stir in fruit. Cover and bring to a boil.

Stir in couscous. Cover and remove from heat. Let stand 5 minutes.

Gently fluff couscous with fork. Sprinkle with almonds, if desired. Serve immediately.

Couscous may be prepared in the microwave oven. Combine orange juice, olive oil, cinnamon, coriander and cayenne pepper in 1-1/2-quart microwaveable casserole with lid; mix well. Stir in fruit. Cover. Microwave on HIGH (100%) until boiling, about 4 minutes. Uncover; stir in couscous. Cover tightly. Let stand 5 minutes. Fluff with fork.
Raisins, dried cranberries or any combination of dried fruits, chopped, may be substituted for dried fruit bits.
